  • 3 15-ounce cans black beans, rinsed and drained
  • 4 cups vegetable broth
  • 1 bay leaf
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 1 tablespoon lime juice
  • 2 tablespoons fresh cilantro, chopped (optional for garnish)

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Add the diced onion, garlic, carrot, and celery. Sauté for 5-7 minutes until the vegetables are softened and the onion is translucent.
