Ingredients

  • 2 packs Instant noodles (uncooked)
  • 4 large Eggs
  • 2 cups Vegetable oil
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 2 tablespoons Spring onions (thinly sliced, for garnish)
  • 0.25 teaspoons Chili flakes (optional, for garnish)

Directions

Step 1

Cook the instant noodles according to the package instructions, but do not add the seasoning packet. Drain and set aside to cool slightly.

Step 2

Heat vegetable oil in a deep frying pan or pot over medium heat.

Step 3

While the oil is heating, divide the cooked noodles into 4 equal portions and shape each portion into a small 'nest' by making a circular mound with a shallow dip in the center.

Step 4

Carefully lower each nest into the hot oil, one at a time, and fry until golden and crispy, about 2-3 minutes per side. Remove with a slotted spoon and drain on paper towels.

Step 5

In a separate pan, fry the eggs sunny-side up or cook them to your preferred style. Season with salt and black pepper.

Step 6

Place one fried egg in the center of each noodle nest.

Step 7

Garnish with thinly sliced spring onions and a sprinkle of chili flakes, if using. Serve immediately and enjoy!
