Ingredients

  • 500 grams beef (chuck or stewing beef), cut into bite-sized chunks
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 3 tablespoons tomato puree
  • 120 ml plain yogurt
  • 2 tablespoons vegetable oil or ghee
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 0.5 teaspoons turmeric powder
  • 1 teaspoon ground paprika
  • 1 teaspoon garam masala
  • 0.5 teaspoons red chili powder
  • 400 ml beef stock or water
  • 1 teaspoon salt
  • 2 tablespoons fresh cilantro, chopped (for garnish)

Directions

Step 1

Heat the oil or ghee in a large, deep pan over medium heat.

Step 2

Add the chopped onion and sauté for 5-7 minutes until golden and softened.

Step 3

Add the minced garlic and ginger, cooking for another 1-2 minutes until fragrant.

Step 4

Stir in the ground cumin, coriander, turmeric, paprika, and red chili powder. Cook the spices for 1-2 minutes to release their aroma.

Step 5

Add the beef chunks to the pan and brown them on all sides for about 5-7 minutes.

Step 6

Mix in the tomato puree and cook for 2-3 minutes until well incorporated.

Step 7

Reduce the heat slightly and stir in the yogurt, a little at a time, to prevent curdling. Cook for 2-3 minutes.

Step 8

Pour in the beef stock or water and add salt. Bring the mixture to a boil.

Step 9

Reduce the heat to low, cover the pan, and let the curry simmer for 45-50 minutes, or until the beef is tender. Stir occasionally and add a little more water if needed to maintain the sauce consistency.

Step 10

Stir in the garam masala and cook for an additional 5 minutes.

Step 11

Garnish with fresh cilantro and serve hot with steamed rice or flatbread.
