Ingredients

  • 1 cup pearl barley
  • 3 cups water
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 medium carrot, diced
  • 2 stalks celery stalks, diced
  • 2 cloves garlic cloves, minced
  • 1 cup mushrooms, sliced
  • 2 cups low-sodium vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped
  • 0.25 cup grated parmesan cheese (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C).

Step 2

Rinse the pearl barley under cold water until the water runs clear. In a medium saucepan, combine the barley and water. Bring to a boil over medium-high heat, then reduce the heat to low, cover, and simmer for 20 minutes. Drain any excess liquid and set the barley aside.

While the barley is cooking, heat the olive oil in a large skillet over medium heat. Add the diced onion, carrots, and celery. Sauté for 5-7 minutes, or until the vegetables are softened.
