Ingredients

  • 2 tablespoons Beef drippings (fat and juices from cooked roast)
  • 1 tablespoon All-purpose flour
  • 2 cups Beef broth
  • 1 teaspoon Worcestershire sauce
  • 0.25 teaspoons Garlic powder
  • 0.25 teaspoons Onion powder
  • 0.25 teaspoons Salt
  • 0.25 teaspoons Black pepper

Directions

Step 1

Place a saucepan over medium heat and add the beef drippings. If you don’t have enough drippings, supplement with 2 tablespoons of butter.

Step 2

Whisk in the all-purpose flour, stirring constantly to form a smooth roux. Let it cook for 1-2 minutes until the flour is lightly golden and fragrant.

Step 3

Gradually pour in the beef broth while whisking continuously to prevent lumps from forming. Bring the mixture to a simmer.

Step 4

Add Worcestershire sauce, garlic powder, onion powder, salt, and black pepper to the saucepan. Stir to combine and let the gravy simmer for 5-7 minutes or until it thickens to your desired consistency.

Step 5

Taste the Au Jus and adjust the seasoning if necessary.

Step 6

Remove from heat and strain the gravy through a fine-mesh sieve if you prefer a smoother texture.

Step 7

Serve warm alongside your favorite roast beef, prime rib, or French dip sandwich.
