Ingredients

  • 4 cups all-purpose flour
  • 1.5 cups unsalted butter (cold, cubed)
  • 1 teaspoon salt
  • 0.5 cups ice water
  • 1 pounds ground beef
  • 0.5 pounds ground pork
  • 1 large onion (finely chopped)
  • 3 cloves garlic (minced)
  • 1 stalk celery (finely chopped)
  • 1 medium potato (peeled and shredded)
  • 0.5 cups beef or chicken broth
  • 0.5 teaspoons ground cinnamon
  • 0.25 teaspoons ground cloves
  • 0.25 teaspoons ground nutmeg
  • 1 teaspoon dried thyme
  • 0.5 teaspoons ground black pepper
  • 1 large egg (for egg wash)
  • 1 tablespoon milk or water (for egg wash)

Directions

Step 1

In a large mixing bowl, combine the flour and salt. Add the cold, cubed butter and use a pastry cutter or your fingers to blend until the mixture resembles coarse crumbs.

Step 2

Gradually add the ice water, one tablespoon at a time, mixing until the dough just comes together. Divide the dough in half, shape each half into a disc, wrap in plastic wrap, and refrigerate for at least 30 minutes.

Step 3

In a large skillet over medium heat, sauté the onion, garlic, and celery until softened, about 5 minutes.

Step 4

Add the ground beef and ground pork to the pan, cooking and breaking it apart with a spatula until browned. Drain any excess grease.

Step 5

Stir in the shredded potato, broth, cinnamon, cloves, nutmeg, thyme, salt, and black pepper. Simmer for 10-15 minutes, stirring occasionally, until the mixture thickens. Remove from heat and let cool slightly.

Step 6

Preheat the oven to 375°F (190°C). Lightly grease a 9-inch pie pan.

Step 7

Roll out one disc of dough on a floured surface to fit the pie pan, leaving some overhang. Gently press it into the pan.

Step 8

Fill the crust with the meat filling, spreading it out evenly.

Step 9

Roll out the second disc of dough and lay it over the filling. Trim any excess dough and crimp the edges to seal. Cut a few small slits in the top crust for steam to escape.

Step 10

In a small bowl, whisk together the egg and milk (or water) to make the egg wash. Brush it over the top of the pie.

Step 11

Bake the pie in the preheated oven for 45-50 minutes, or until the crust is golden brown and the filling is bubbly.

Step 12

Allow the pie to cool for at least 10 minutes before slicing and serving. Enjoy Simone's Famous Xmas Meat Pie with your loved ones!
