Ingredients

  • 4 pieces boneless pork chops
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1 medium, finely chopped shallot
  • 2 cloves, minced garlic
  • 0.5 cup white wine
  • 1 cup chicken broth
  • 2 tablespoons Dijon mustard
  • 2 tablespoons, drained and rinsed capers
  • 0.25 cup heavy cream
  • 2 tablespoons, chopped fresh parsley

Directions

Step 1

Season both sides of the pork chops with salt and pepper.

Step 2

Heat olive oil in a large skillet over medium-high heat. Once the oil is shimmering, sear the pork chops for 3-4 minutes on each side until golden brown. Remove the pork chops and set aside on a plate.

Step 3

Reduce the heat to medium and add the butter to the skillet. Once melted, add the chopped shallot and sauté for 2-3 minutes until translucent.

Step 4

Stir in the minced garlic and cook for an additional 30 seconds, being careful not to let it burn.

Step 5

Deglaze the skillet with white wine, scraping up any browned bits from the bottom of the pan. Allow the wine to reduce by half, about 3-4 minutes.

Step 6

Stir in the chicken broth, Dijon mustard, and capers, mixing well to combine.

Step 7

Return the pork chops to the skillet, spooning some of the sauce over them. Reduce the heat to low, cover the skillet with a lid, and simmer for 15 minutes, or until the pork chops are cooked through (internal temperature of 145°F/63°C).

Step 8

Remove the pork chops from the skillet and transfer them to a serving platter, covering them loosely with foil to keep warm.

Step 9

Stir the heavy cream into the sauce and let it simmer for 2-3 minutes until slightly thickened. Taste the sauce and adjust the seasoning if needed.

Step 10

Pour the sauce over the pork chops and garnish with fresh chopped parsley. Serve warm with your choice of side dishes, such as mashed potatoes or roasted vegetables.
