Ingredients

  • 2 tablespoons olive oil
  • 1 large, diced onion
  • 3 minced garlic cloves
  • 3 medium, chopped carrots
  • 2 chopped celery stalks
  • 3 medium, diced potatoes
  • 1.5 pounds stew beef
  • 4 cups beef broth
  • 1 14-ounce can canned diced tomatoes
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 whole bay leaf
  • 1 teaspoon (or to taste) salt
  • 0.5 teaspoon (or to taste) black pepper
  • 1 cup, trimmed and halved green beans
  • 2 tablespoons, chopped (optional, for garnish) parsley

Directions

Step 1

Heat the olive oil in a large Dutch oven or heavy-bottomed pot over medium heat.

Step 2

Add the diced onion and sauté for 3-4 minutes until softened. Add the minced garlic and cook for an additional 1 minute until fragrant.

Step 3

Stir in the chopped carrots and celery and sauté for 5 minutes to slightly soften the vegetables.

Step 4

Push the vegetables to the side of the pot and add the stew beef. Brown the beef on all sides, about 5-7 minutes.

Step 5

Stir in the diced potatoes, beef broth, and canned diced tomatoes with their juice.

Step 6

Add the dried thyme, rosemary, bay leaf, salt, and black pepper. Stir well to combine.

Step 7

Bring the mixture to a boil, then reduce the heat to low to maintain a gentle simmer. Cover the pot and let it simmer for about 1 hour, stirring occasionally.

Step 8

After 1 hour, add the green beans to the pot. Cover and cook for an additional 15-20 minutes, or until the vegetables are tender and the beef is fully cooked.

Step 9

Remove the bay leaf and discard it. Taste the broth and adjust seasonings as needed.

Step 10

Ladle the simmered dinner into bowls and garnish with chopped parsley, if desired. Serve hot and enjoy!
