  • 4 pieces chicken thighs

  • 2 tablespoons brown sugar
  • 1 thumb-sized piece, sliced ginger
  • 4 pieces, smashed garlic cloves
  • 2 pieces star anise
  • 1 piece cinnamon stick
  • 4 stalks, cut into 2-inch pieces scallions
  • 2 cups water
  • 1 teaspoon sesame oil

Directions

Step 1

Prepare the chicken by trimming any excess fat from the thighs. Pat them dry with a paper towel and set aside.

Step 2

In a large, deep pan or pot, heat the sesame oil over medium heat.

Step 3

Add the sliced ginger, smashed garlic, star anise, and the cinnamon stick. Stir-fry for about 1-2 minutes until aromatic.

Place the chicken thighs skin-side down into the pan. Sear for 3-4 minutes on each side until lightly browned.
