Ingredients

  • 500 grams Beef chuck, cut into bite-sized pieces
  • 250 grams Button mushrooms, sliced
  • 1 large White onion, thinly sliced
  • 3 cloves Garlic, minced
  • 2 cups Beef broth
  • 3 tablespoons Soy sauce
  • 2 tablespoons Worcestershire sauce
  • 2 sprigs Fresh thyme (optional)
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 2 tablespoons Olive oil
  • 2 tablespoons Cornstarch
  • 2 tablespoons Water (for cornstarch slurry)
  • 2 tablespoons Chopped parsley (for garnish)

Directions

Step 1

Heat a large skillet or Dutch oven over medium-high heat and add 1 tablespoon of olive oil.

Step 2

Season the beef pieces with salt and pepper, then sear them in the skillet until browned on all sides, about 5-7 minutes. Do this in batches if necessary. Remove the beef and set aside.

Step 3

In the same skillet, add the remaining tablespoon of olive oil. Sauté the onions until softened and translucent, about 5 minutes.

Step 4

Add the garlic and cook for an additional 1-2 minutes until fragrant.

Step 5

Stir in the mushrooms and cook until they release their moisture and begin to brown, about 5 minutes.

Step 6

Return the beef to the skillet and pour in the beef broth, soy sauce, and Worcestershire sauce. Add the thyme sprigs if using.

Step 7

Bring the mixture to a gentle simmer, cover, and cook on low heat for 25-30 minutes until the beef is tender.

Step 8

In a small bowl, mix the cornstarch and water to create a slurry. Gradually stir this into the simmering beef and mushroom mixture to thicken the sauce. Cook for another 2-3 minutes.

Step 9

Taste and adjust seasoning with additional salt and pepper if needed.

Step 10

Garnish with chopped parsley before serving. Serve hot with your favorite side dish, such as rice, potatoes, or crusty bread.
