Ingredients

  • 5 cups baby spinach
  • 3 cups arugula
  • 1 granny smith apple
  • 1 cup mandarin oranges
  • 0.5 red onion
  • 0.25 cup slivered almonds
  • 0.5 cup crumbled feta cheese
  • 3 tablespoons olive oil
  • 2 tablespoons freshly squeezed orange juice
  • 1.5 tablespoons white balsamic vinegar
  • 1 teaspoon honey
  • 1 teaspoon Dijon mustard
  • 0.25 teaspoon salt
  • 0.25 teaspoon pepper

Directions

Step 1

Wash and dry the baby spinach and arugula, then place them in a large salad bowl.

Step 2

Core and thinly slice the granny smith apple into matchsticks or thin wedges. Add to the salad bowl.

Step 3

Drain the mandarin oranges if using canned ones, or peel and segment fresh mandarins. Add them to the salad.

Peel and thinly slice the red onion into rings or half rings, depending on preference. Add to the salad bowl.
