Ingredients

  • 12 oz Smoked sausage
  • 3 cups Fresh sweet corn kernels (or frozen, thawed)
  • 2 medium Green bell peppers, diced
  • 1 medium Red bell peppers, diced
  • 1 medium Yellow onion, diced
  • 1 medium Zucchini, diced
  • 1.5 cups Fresh okra, sliced (or frozen, thawed)
  • 1 cup Cherry tomatoes, halved
  • 2 tbsp Butter
  • 1 tbsp Olive oil
  • 3 Garlic cloves, minced
  • 1 tsp Salt
  • 1 tsp Black pepper
  • 1 tsp Smoked paprika
  • 0.25 tsp Ground cayenne pepper (optional)
  • 2 tbsp Fresh parsley, chopped (for garnish)

Directions

Step 1

Slice the smoked sausage into bite-sized rounds and set aside.

Step 2

In a large skillet or cast-iron pan over medium heat, melt the butter and add the olive oil.

Step 3

Add the smoked sausage to the skillet and cook for 5 minutes, stirring occasionally, until browned. Remove the sausage and set aside on a plate.

Step 4

Add the diced onion, garlic, and bell peppers to the skillet. Sauté for 4–5 minutes, until the vegetables start to soften.

Step 5

Stir in the zucchini, okra, and corn. Season the mixture with salt, black pepper, smoked paprika, and cayenne pepper (if using). Cook for another 5 minutes, stirring occasionally.

Step 6

Add the cherry tomatoes and the browned sausage back to the skillet. Stir well and cook for an additional 5 minutes, allowing all the flavors to meld together.

Step 7

Taste and adjust seasoning if necessary.

Step 8

Remove the skillet from the heat and garnish with fresh parsley before serving.

Step 9

Serve the succotash warm as a main dish or a hearty side, and enjoy!
