Ingredients

  • 6 large Egg whites
  • 1.5 cups Granulated sugar
  • 2.5 cups All-purpose flour
  • 1 tablespoon Baking powder
  • 0.5 teaspoons Salt
  • 0.75 cups Unsalted butter
  • 1 cup Milk
  • 2 teaspoons Vanilla extract

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line them with parchment paper.

Step 2

In a medium-sized bowl, sift together the all-purpose flour, baking powder, and salt. Set aside.

Step 3

In a large mixing bowl, cream the unsalted butter and granulated sugar together using an electric mixer. Beat on medium speed until light and fluffy, about 3-4 minutes.

Step 4

Reduce the mixer speed to low and gradually add the dry ingredients to the butter mixture, alternating with the milk. Start and end with the dry ingredients, mixing just until combined after each addition.

Step 5

Stir in the vanilla extract until incorporated.

Step 6

In a separate clean bowl, using a stand mixer or handheld mixer with clean beaters, whisk the egg whites on high speed until stiff peaks form.

Step 7

Gently fold the whipped egg whites into the batter in three additions. Use a spatula and take care not to deflate the airiness of the egg whites.

Step 8

Divide the batter evenly between the prepared cake pans, spreading the tops smooth with a spatula.

Step 9

Bake in the preheated oven for 28-30 minutes or until a toothpick inserted into the center of the cakes comes out clean.

Step 10

Remove the cakes from the oven and allow them to cool in the pans for 10-15 minutes. Then, carefully turn them out onto wire racks to cool completely before frosting or serving.
