Ingredients

  • 300 grams fresh raspberries
  • 100 grams granulated sugar
  • 250 milliliters heavy cream
  • 2 teaspoons gelatin powder
  • 3 tablespoons cold water
  • 1 teaspoon vanilla extract
  • 100 grams extra raspberries (for garnish)
  • 6 pieces fresh mint leaves (for garnish)

Directions

Step 1

Place the fresh raspberries and granulated sugar in a blender or food processor and blend until smooth.

Step 2

Pass the raspberry puree through a fine-mesh sieve to remove seeds. Discard the seeds and set the smooth puree aside.

Step 3

In a small bowl, sprinkle the gelatin powder over the cold water and let it bloom for 5 minutes.

Once bloomed, heat the gelatin mixture in the microwave for 10-15 seconds or until fully dissolved. Stir well and let cool slightly.

Stir the dissolved gelatin into the raspberry puree until thoroughly combined.
