  • 300 grams Pork shoulder
  • 150 grams Raw shrimp, peeled and deveined
  • 24 Wonton wrappers
  • 4 pieces Dried shiitake mushrooms
  • 50 grams Water chestnuts
  • 2 tablespoons Soy sauce
  • 1 tablespoon Oyster sauce
  • 1 tablespoon Shaoxing wine or dry sherry
  • 1 teaspoon Sesame oil
  • 2 teaspoons Cornstarch
  • 1 teaspoon Sugar
  • 0.5 teaspoon Ground white pepper
  • 0.5 teaspoon Salt
  • 2 tablespoons Chopped scallions
  • 1 Egg
  • 24 pieces Sweet peas or carrot pieces for garnish

Directions

Step 1

Soak the dried shiitake mushrooms in warm water for 20 minutes until softened. Once softened, squeeze out the excess water, remove the stems, and finely chop.

Step 2

Chop the water chestnuts finely.

Step 3

In a food processor, combine the pork shoulder and raw shrimp. Pulse until you achieve a finely ground mixture.

In a large mixing bowl, combine the ground pork and shrimp mixture with the chopped shiitake mushrooms, chopped water chestnuts, soy sauce, oyster sauce, Shaoxing wine, sesame oil, cornstarch, sugar, ground white pepper, salt, chopped scallions, and the egg.
