Ingredients

  • 4 pieces chicken thighs (bone-in, skin-on)
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 4 pieces garlic cloves, minced
  • 1 tablespoon lemon zest
  • 2 tablespoons lemon juice
  • 1 cup chicken broth
  • 2 cups grape tomatoes, halved
  • 1 cup golden raisins
  • 0.5 teaspoons red chili flakes
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Pat the chicken thighs dry with a paper towel. Season them with salt and black pepper on both sides.

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Place the chicken thighs skin-side down in the skillet and cook for 5-6 minutes until the skin is golden and crisp. Flip the chicken and cook for another 3-4 minutes. Remove the chicken from the skillet and set aside.
