Ingredients

  • 1 head Cauliflower
  • 4 tablespoons Extra-virgin olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 cloves Garlic cloves
  • 2 tablespoons Lemon juice
  • 2 tablespoons Orange juice
  • 1 orange Zest of an orange
  • 2 tablespoons Capers
  • 3 tablespoons Raisins
  • 2 tablespoons Flat-leaf parsley
  • 3 tablespoons Toasted almonds

Directions

Step 1

Preheat your oven to 425°F (220°C).

Step 2

Cut the cauliflower into small florets and place them on a baking sheet.

Step 3

Drizzle 2 tablespoons of olive oil over the cauliflower and season with 1 teaspoon of salt and 1/2 teaspoon of black pepper. Toss well to coat evenly.

Step 4

Roast the cauliflower in the preheated oven for about 20-25 minutes, flipping once halfway through, until golden brown and tender.

Step 5

While the cauliflower is roasting, finely chop the garlic and add it to a small bowl.

To the bowl with the garlic, add the lemon juice, orange juice, orange zest, and the remaining 2 tablespoons of olive oil. Whisk together to make the dressing.
