Ingredients

  • 500 grams All-purpose flour
  • 7 grams Instant dry yeast
  • 10 grams Sugar
  • 10 grams Salt
  • 60 milliliters Olive oil
  • 300 milliliters Warm water
  • 250 grams Ricotta cheese
  • 200 grams Mozzarella cheese, shredded
  • 50 grams Pecorino Romano cheese, grated
  • 150 grams Italian salami, thinly sliced
  • 100 grams Sun-dried tomatoes, chopped
  • 50 grams Black olives, sliced
  • 10 grams Fresh basil leaves, chopped
  • 1 piece Egg, beaten (for egg wash)
  • 2 grams Black pepper

Directions

Step 1

In a large mixing bowl, combine the flour, instant dry yeast, sugar, and salt. Mix well.

Step 2

Make a well in the center of the dry ingredients and pour in the warm water and olive oil.

Step 3

Knead the mixture until it forms a soft, smooth, and elastic dough, about 8-10 minutes. Cover the dough with a clean kitchen towel and let it rise for about 1 hour in a warm spot, or until it doubles in size.

While the dough is rising, prepare the filling. In a medium bowl, combine ricotta cheese, mozzarella, Pecorino Romano, Italian salami slices, sun-dried tomatoes, black olives, basil, and freshly ground black pepper. Mix well and set aside.
