In a large mixing bowl, combine the flour, instant dry yeast, sugar, and salt. Mix well.
Make a well in the center of the dry ingredients and pour in the warm water and olive oil.
Knead the mixture until it forms a soft, smooth, and elastic dough, about 8-10 minutes. Cover the dough with a clean kitchen towel and let it rise for about 1 hour in a warm spot, or until it doubles in size.
While the dough is rising, prepare the filling. In a medium bowl, combine ricotta cheese, mozzarella, Pecorino Romano, Italian salami slices, sun-dried tomatoes, black olives, basil, and freshly ground black pepper. Mix well and set aside.
Preheat your oven to 200°C (400°F) and line a large baking sheet with parchment paper.
Once the dough has risen, punch it down and divide it into 4 equal portions. Roll each portion into a circle about 25 cm (10 inches) in diameter on a lightly floured surface.
Place 1/4 of the prepared filling onto one half of each dough circle, leaving a small border around the edge.
Fold the empty half of the dough over the filling to form a crescent shape. Press the edges together tightly and crimp them with a fork to seal.
Transfer the formed calzones onto the prepared baking sheet and brush the tops with the beaten egg for a golden finish.
Bake in the preheated oven for 20-25 minutes, or until the calzones are golden brown and crispy.
Remove the calzones from the oven and let them cool for a few minutes before serving.
Serve warm and enjoy your Sicilian Calzones with a side of marinara sauce, if desired.
