Ingredients

  • 6 pieces bone-in, skin-on chicken thighs
  • 3 tablespoons olive oil
  • 1 large yellow onion, finely chopped
  • 3 cloves garlic, minced
  • 0.333 cup white wine vinegar
  • 0.25 cup honey
  • 2 tablespoons tomato paste
  • 2 cups chicken broth
  • 0.25 cup golden raisins
  • 2 tablespoons capers, rinsed and drained
  • 0.333 cup pitted green olives, roughly chopped
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Season the chicken thighs with salt and black pepper on both sides.

Step 2

In a large skillet or braiser over medium-high heat, heat 2 tablespoons of olive oil. Sear the chicken thighs, skin-side down, for 5 minutes or until golden brown, then flip and cook for another 3 minutes. Remove the chicken from the skillet and set aside.

Step 3

Reduce the heat to medium and add the remaining 1 tablespoon of olive oil to the skillet. Add the chopped onion and cook until softened, about 5 minutes. Stir in the minced garlic and cook for an additional 1 minute.

Step 4

Deglaze the skillet by adding the white wine vinegar, scraping up any browned bits from the bottom of the pan. Let it simmer for 1-2 minutes to reduce slightly.

Step 5

Stir in the honey, tomato paste, and chicken broth until combined. Add the golden raisins, capers, and olives, and bring the mixture to a simmer.

Step 6

Nestle the chicken thighs back into the skillet, skin-side up, ensuring they are partially submerged in the liquid. Reduce the heat to low, cover, and let simmer gently for 35-40 minutes, or until the chicken is cooked through and tender.

Step 7

Uncover the skillet and let the sauce reduce slightly for 5-7 minutes if needed, until it reaches a glossy, thickened consistency.

Step 8

Sprinkle fresh parsley over the dish before serving. Serve hot with crusty bread, polenta, or over a bed of rice.
