  • 1 tablespoon fresh rosemary, chopped
  • 2 units bay leaves
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped (for garnish)

Directions

Step 1

Cut the beef chuck roast into large chunks (about 4-5 cm pieces) and pat dry with paper towels. Season generously with salt and black pepper.

Heat 2 tablespoons of olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat. Sear the beef in batches until well-browned on all sides, about 3-4 minutes per side. Remove the beef and set aside.
