Ingredients

  • 2 tablespoons Sichuan chili bean paste (Doubanjiang)
  • 1 inch piece, thinly sliced fresh ginger
  • 4 cloves, thinly sliced garlic cloves
  • 6 pieces whole dried red chilies
  • 3 stalks, cut into 2-inch pieces scallions (green onions)
  • 1 teaspoon sugar
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • 2 tablespoons vegetable oil
  • 1 teaspoon sesame oil
  • 2 tablespoons, chopped fresh cilantro (optional, for garnish)

Directions

Step 1

Pat the cod fillets dry with paper towels and set them aside.

Step 2

In a small bowl, mix the light soy sauce, dark soy sauce, Shaoxing wine, sugar, and chicken stock. Set aside.

In another small bowl, combine the cornstarch and water to create a slurry. Set aside for later.
