Ingredients

  • 300 grams Siamese watercress (morning glory or pak boong)
  • 2 tablespoons Fermented yellow beans
  • 4 cloves Garlic
  • 1 piece Red chili (optional, for heat)
  • 1 tablespoon Soy sauce
  • 1 tablespoon Oyster sauce
  • 1 teaspoon Sugar
  • 2 tablespoons Water
  • 2 tablespoons Vegetable oil

Directions

Step 1

Rinse the Siamese watercress thoroughly under running water to remove any dirt. Trim the stems into 3-inch pieces and set aside.

Step 2

Peel the garlic cloves and chop them roughly. If using chili, slice it thinly.

Step 3

Heat a large wok or skillet over medium-high heat and add vegetable oil.

Step 4

Once the oil is hot, add the chopped garlic and sliced chili (if using). Stir-fry for 30 seconds until fragrant.

Step 5

Add the fermented yellow beans to the wok and stir-fry for another 30 seconds to release their flavor.

Step 6

Increase the heat to high and toss in the watercress. Stir quickly to coat the greens in the oil and seasonings.
