Ingredients

  • 4 medium sweet potatoes
  • 6 tablespoons unsalted butter
  • 1 cup brown sugar
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon salt
  • 2 large eggs
  • 0.5 cup all-purpose flour
  • 0.5 cup pecans (chopped)
  • 0.25 cup granulated sugar

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish and set aside.

Step 2

Peel the sweet potatoes and cut them into chunks. Add them to a large pot of boiling water and cook until they are tender, about 15-20 minutes. Drain and let them cool slightly.

Step 3

In a large mixing bowl, mash the cooked sweet potatoes until smooth. Add 4 tablespoons of melted butter, brown sugar, milk, vanilla extract, cinnamon, salt, and eggs. Mix until well combined and smooth.

Step 4

Pour the sweet potato mixture into the prepared baking dish and smooth it out with a spatula.

Step 5

In a separate small bowl, prepare the streusel topping by mixing together the flour, chopped pecans, granulated sugar, and the remaining 2 tablespoons of melted butter. Stir until a crumbly texture forms.

Step 6

Evenly sprinkle the streusel topping over the sweet potato mixture in the baking dish.

Step 7

Bake in the preheated oven for 30-35 minutes, or until the topping is golden brown and the casserole is heated through.

Step 8

Remove from the oven and let cool slightly before serving. Enjoy Shu Wen's Sweet Potato Casserole warm!
