Ingredients

  • 150 g Butter
  • 300 g Plain flour
  • 4 tbsp Cold water
  • 250 g Cooked ham
  • 2 Cooking apples
  • 1 Onion
  • 4 Sage leaves
  • 1 tsp Salt
  • 1 tsp Black pepper
  • 150 ml Dry cider
  • 1 Egg

Directions

Step 1

Preheat your oven to 200°C (180°C fan-assisted, 400°F, gas mark 6).

Step 2

In a large mixing bowl, rub the butter into the flour with your fingertips until the mixture resembles fine breadcrumbs.

Step 3

Add the cold water a tablespoon at a time, mixing until the dough comes together. Wrap the pastry in cling film and refrigerate for 20 minutes.

Peel, core, and thinly slice the apples. Finely chop the onion and sage leaves.

Dice the cooked ham into small chunks and set aside.

Roll out two-thirds of the chilled pastry on a floured surface to line a 20cm pie dish, leaving some overhang.
