Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish with olive oil or cooking spray and set aside.
In a large skillet over medium heat, cook the Italian sausage, breaking it into small pieces with a wooden spoon. Cook until browned and fully cooked, about 7-8 minutes. Transfer to a large mixing bowl with a slotted spoon, leaving the rendered fat in the skillet.
Melt the butter in the skillet with the sausage drippings. Add the diced onions and chopped celery. Cook until softened, about 5 minutes.
Add the sliced mushrooms to the skillet and cook until they release their liquid and start to brown, about 6-8 minutes. Stir in the minced garlic and cook for 1 additional minute. Transfer the mixture to the bowl with the sausage.
Add the cubed bread, parsley, thyme leaves, sage, salt, and black pepper to the bowl. Toss until all ingredients are well combined.
Slowly pour the chicken or vegetable stock over the bread mixture, stirring gently to moisten the bread evenly. The consistency should be damp but not soggy. Adjust the amount of stock as needed.
Add the beaten eggs to the bowl and mix thoroughly to bind the mixture together.
Transfer the dressing mixture to the prepared baking dish, spreading it out evenly. Cover the dish with aluminum foil.
Bake the dressing covered for 30 minutes. Then remove the foil and bake uncovered for an additional 15-20 minutes, or until the top is golden brown and crispy.
Remove from the oven and let rest for 5-10 minutes before serving. Garnish with additional chopped parsley if desired. Serve warm.
