Ingredients

  • 12 ounces linguine pasta
  • 1 pound large shrimp, peeled and deveined
  • 4 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 4 cloves garlic, minced
  • 2 tablespoons lemon juice
  • 1 cup heavy cream
  • 3 ounces parmesan cheese, grated
  • 0.25 cup fresh parsley, chopped
  • 0.25 teaspoon red pepper flakes
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Bring a large pot of salted water to a boil and cook the linguine according to the package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set it aside.

Step 2

While the pasta is cooking, heat 2 tablespoons of butter and 1 tablespoon of olive oil in a large skillet over medium heat. Add the shrimp and cook for 2-3 minutes per side until pink and fully cooked. Remove the shrimp from the skillet and set aside.

Step 3

In the same skillet, add the minced garlic and sauté for 1 minute until fragrant, being careful not to let it burn.

Step 4

Lower the heat to medium-low and pour in the lemon juice, heavy cream, and the remaining 2 tablespoons of butter. Stir to combine and let the sauce simmer for 2 minutes.

Step 5

Stir in the grated parmesan cheese, salt, black pepper, and red pepper flakes. Cook for another 2-3 minutes, stirring constantly, until the cheese has melted and the sauce is smooth. If the sauce is too thick, add a splash of reserved pasta water to reach the desired consistency.

Step 6

Return the cooked shrimp to the skillet and toss to coat them in the sauce. Add the cooked pasta and gently toss until everything is evenly combined and coated in the sauce.

Step 7

Sprinkle the chopped parsley over the pasta and give everything a final stir. Taste and adjust seasoning with additional salt or pepper if needed.

Step 8

Serve immediately, garnished with extra parmesan cheese if desired.
