Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 2 tbsp olive oil
  • 1 tbsp butter
  • 1 medium yellow onion, finely chopped
  • 3 cloves garlic cloves, minced
  • 2 cups cherry tomatoes, halved
  • 1 cup dry white wine
  • 0.5 cup chicken or vegetable broth (optional)
  • 0.25 cup fresh basil leaves, chopped
  • 0.25 tsp red pepper flakes
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.5 lemon lemon, juiced
  • 0 cooked pasta, rice, or crusty bread (for serving)

Directions

Step 1

Heat the olive oil and butter in a large skillet over medium heat until the butter is melted.

Step 2

Add the chopped onion to the skillet and sauté for 3-4 minutes, or until translucent.

Step 3

Stir in the minced garlic and cook for an additional 30 seconds, being careful not to burn it.

Step 4

Add the halved cherry tomatoes to the skillet and sauté for 5 minutes, stirring occasionally, until they begin to soften and release their juices.

Step 5

Deglaze the skillet by pouring in the white wine and scraping up any browned bits from the bottom of the pan. Allow the wine to simmer for 2-3 minutes.

Step 6

Stir in the chicken or vegetable broth (if using), red pepper flakes, salt, and black pepper.

Step 7

Gently nestle the shrimp into the tomato-wine mixture in a single layer. Cook for 2-3 minutes on one side, then flip and cook for another 2-3 minutes, or until the shrimp are pink, opaque, and cooked through.

Step 8

Remove the skillet from heat and stir in the fresh basil and a squeeze of lemon juice for brightness.

Step 9

Taste and adjust seasoning with more salt, pepper, or red pepper flakes as needed.

Step 10

Serve immediately over pasta, rice, or with crusty bread to soak up the flavorful sauce.
