Ingredients

  • 12 oz Pasta (spaghetti or linguine)
  • 3 tbsp Olive oil
  • 1 lb Large shrimp (peeled and deveined)
  • 4 cloves Garlic cloves (minced)
  • 2 cups Cherry tomatoes (halved)
  • 1 cup Crushed tomatoes
  • 0.5 cup Fresh basil leaves (chopped)
  • 0.5 tsp Red pepper flakes
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 0.5 cup Parmesan cheese (grated, optional)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

Step 2

In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the shrimp, season with a pinch of salt and black pepper, and cook for 2-3 minutes per side until pink and opaque. Remove the shrimp from the skillet and set aside.

Step 3

In the same skillet, add the remaining 1 tablespoon of olive oil. Add the minced garlic and cook for 1 minute until fragrant.

Step 4

Add the cherry tomatoes and cook for 5 minutes, stirring occasionally, until they begin to soften and release their juices.

Step 5

Stir in the crushed tomatoes, red pepper flakes, 1 teaspoon of salt, and 0.5 teaspoon of black pepper. Let the sauce simmer for 5-7 minutes to thicken slightly.

Add the fresh basil to the sauce and stir well. Return the cooked shrimp to the skillet and toss to combine, allowing the shrimp to warm through for 1-2 minutes.

Step 7

Add the cooked pasta to the skillet and toss to coat in the sauce. If the sauce is too thick, add reserved pasta water a little at a time until it reaches your desired consistency.

Step 8

Serve immediately, garnished with grated Parmesan cheese if desired.
