Ingredients

  • 1 lb Shrimp (large, peeled and deveined)
  • 1 cup Sun-dried tomatoes (packed in oil, drained)
  • 1 cup Ketchup
  • 2 tbsp Apple cider vinegar
  • 2 tbsp Brown sugar
  • 1 tsp Smoked paprika
  • 2 cloves Garlic cloves (minced)
  • 2 tbsp Olive oil
  • 0.5 tsp Red pepper flakes
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 2 tbsp Fresh parsley (chopped, for garnish)
  • 4 pieces Lemon wedges (for serving)

Directions

Step 1

Rinse and pat the shrimp dry with paper towels. Season them lightly with salt and black pepper, then set aside.

Step 2

In a blender or food processor, combine the sun-dried tomatoes, ketchup, apple cider vinegar, brown sugar, smoked paprika, garlic, olive oil, red pepper flakes, 1 tsp salt, and 0.5 tsp black pepper. Blend until smooth to form the barbecue sauce.

Step 3

Heat a grill or grill pan over medium-high heat. Lightly oil the grates or surface to prevent sticking.

Step 4

Thread the shrimp onto skewers if grilling or leave them loose if using a grill pan.

Step 5

Brush a small amount of the prepared barbecue sauce onto the shrimp to lightly coat them.

Step 6

Grill the shrimp for 2-3 minutes per side or until they turn pink and opaque. Be careful not to overcook.

Step 7

Transfer the grilled shrimp to a serving platter and brush generously with more barbecue sauce.

Step 8

Garnish with chopped parsley and serve immediately with lemon wedges on the side.
