Ingredients

  • 450 grams Shrimp (peeled and deveined, medium size)
  • 200 grams Snow peas (trimmed)
  • 150 grams Water chestnuts (sliced, canned or fresh)
  • 3 tablespoons Soy sauce
  • 2 tablespoons Oyster sauce
  • 2 teaspoons Sesame oil
  • 3 cloves Garlic (minced)
  • 1 teaspoon Ginger (minced)
  • 1 teaspoon Cornstarch
  • 4 tablespoons Water
  • 2 tablespoons Vegetable oil
  • 2 stalks Green onions (sliced, optional garnish)
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

In a small bowl, mix the soy sauce, oyster sauce, sesame oil, and cornstarch with 4 tablespoons of water to create a smooth sauce. Set aside.

Step 2

Heat a wok or large skillet over medium-high heat and add 1 tablespoon of vegetable oil.

Step 3

Once the oil is hot, add the shrimp and season them with salt and black pepper. Stir-fry for 2-3 minutes, or until the shrimp turn pink and are just cooked through. Remove the shrimp from the pan and set aside.

Step 4

In the same pan, add the remaining 1 tablespoon of vegetable oil. Sauté the garlic and ginger for 30 seconds until fragrant.

Add the snow peas and water chestnuts to the pan. Stir-fry for 2-3 minutes, or until the vegetables are tender-crisp.
