Ingredients

  • 1 pound large shrimp (peeled and deveined)
  • 2 tablespoons olive oil
  • 3 cloves garlic cloves (minced)
  • 2 peppers chipotle peppers in adobo sauce
  • 1 tablespoon adobo sauce (from chipotle can)
  • 2 tablespoons tomato paste
  • 0.5 cup chicken broth
  • 1 tablespoon honey
  • 2 tablespoons lime juice (freshly squeezed)
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper (freshly ground)
  • 2 tablespoons cilantro (chopped, for garnish)
  • 4 wedges lime wedges (for serving)

Directions

Step 1

Rinse the shrimp under cold water and pat dry with paper towels. Set aside.

Step 2

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.

Step 3

Add the chipotle peppers, adobo sauce, tomato paste, chicken broth, honey, lime juice, smoked paprika, salt, and black pepper to the skillet. Stir well to combine all the ingredients.

Step 4

Simmer the sauce for 5-7 minutes, stirring occasionally, until it slightly thickens. Use an immersion blender or transfer the sauce to a regular blender and blend until smooth. Return the sauce to the skillet over low heat.

Step 5

In a separate skillet, heat the remaining 1 tablespoon of olive oil over medium-high heat. Add the shrimp in a single layer and cook for 2-3 minutes per side, or until pink and cooked through.

Step 6

Transfer the cooked shrimp to the skillet with the chipotle sauce. Toss to coat the shrimp evenly in the sauce, cooking for an additional 2 minutes to meld the flavors.

Step 7

Remove the skillet from heat and garnish the shrimp with freshly chopped cilantro.

Step 8

Serve immediately with lime wedges on the side. Pair with steamed rice, crusty bread, or tortillas for a complete meal.
