Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 1 medium shallot, finely diced
  • 3 cloves garlic cloves, minced
  • 0.5 cup dry white wine
  • 3 cups low-sodium chicken broth
  • 0.5 tsp saffron threads
  • 1 cup orzo pasta
  • 0.25 cup heavy cream
  • 0.5 cup grated Parmesan cheese
  • 2 tbsp fresh parsley, chopped
  • 1 tsp lemon zest
  • 1 tbsp lemon juice

Directions

Step 1

Season the shrimp with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper. Set aside.

Step 2

In a large, deep skillet over medium heat, heat 1 tablespoon of olive oil. Add the shrimp in a single layer and cook for about 2 minutes per side until pink and opaque. Remove from the skillet and set aside.

Step 3

In the same skillet, heat the remaining 1 tablespoon of olive oil and 2 tablespoons of unsalted butter over medium heat. Add the diced shallot and cook for 2-3 minutes until softened. Add the minced garlic and sauté for another 30 seconds until fragrant.

Return the cooked shrimp to the skillet, along with any accumulated juices. Stir to combine and heat through for 1-2 minutes.

Remove the skillet from the heat and stir in the chopped parsley, lemon zest, and lemon juice. Adjust seasoning to taste with salt and pepper, if needed.

Serve immediately, garnished with additional parsley and Parmesan cheese if desired.
