  • 0.5 cup Olive oil
  • 0.25 cup Grated Parmesan cheese
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Pine nuts or walnuts (optional, toasted)
  • 1 tablespoon Vegetable oil (for cooking shrimp)

Directions

Step 1

Rinse the shrimp under cold water and pat them dry with a paper towel. Set them aside.

To prepare the green chili pesto, combine cilantro, parsley, green chilies, garlic, lime juice, olive oil, Parmesan cheese, salt, black pepper, and pine nuts (if using) in a food processor or blender.
