Ingredients

  • 1 pound Large shrimp (peeled and deveined)
  • 0.5 cup Orange juice (freshly squeezed)
  • 0.5 cup Heavy cream
  • 2 pieces Chipotle peppers in adobo sauce
  • 2 pieces Garlic cloves (minced)
  • 2 tablespoons Olive oil
  • 1 tablespoon Butter
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Cilantro (chopped, for garnish)

Directions

Step 1

Rinse the shrimp under cold water and pat them dry with paper towels. Season them with salt and black pepper, ensuring they are evenly coated.

Step 2

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the shrimp in a single layer and cook for 2-3 minutes on each side until they turn pink and opaque. Remove the shrimp from the skillet and set aside.

Step 3

In the same skillet, add the remaining 1 tablespoon of olive oil and 1 tablespoon of butter. Once the butter has melted, add the minced garlic and sauté for 30 seconds until fragrant.

Step 4

Chop the chipotle peppers finely. Add the chipotle peppers to the skillet along with the adobo sauce from the can, followed by the orange juice. Stir well and bring the mixture to a gentle simmer.

Step 5

Lower the heat to medium-low and stir in the heavy cream. Allow the sauce to simmer for 3-4 minutes, stirring occasionally, until it thickens slightly.

Step 6

Return the cooked shrimp to the skillet and toss to coat them in the sauce. Cook for an additional 2-3 minutes to heat the shrimp through.

Step 7

Taste the sauce and adjust the seasoning with additional salt if needed.

Step 8

Remove the skillet from heat, garnish the shrimp with chopped cilantro, and serve hot. This dish pairs wonderfully with rice, pasta, or a fresh green salad.
