  • 3 tbsp heavy cream
  • 0.5 cup chicken or vegetable stock
  • 1 tbsp fresh lime juice
  • 2 tbsp cilantro, chopped
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 2 cups cooked white rice or tortillas, for serving

Directions

Step 1

Rinse and pat dry the shrimp with paper towels. Sprinkle the shrimp with salt and black pepper, and set them aside.

Step 2

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the shrimp in a single layer and cook for 2-3 minutes per side, or until they turn pink and opaque. Remove the shrimp from the pan and set aside.

Step 3

In the same skillet, add the remaining 1 tablespoon of olive oil. Reduce the heat to medium and sauté the minced garlic for 30 seconds, until fragrant.
