  • 0.25 cup dry white wine
  • 0.25 cup chicken or vegetable stock
  • 2 tbsp fresh parsley, chopped
  • 0.25 tsp red pepper flakes (optional)
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Directions

Step 1

Pat the shrimp dry with paper towels. Season shrimp with salt and black pepper, and set aside.

Step 2

Drain and rinse the artichoke hearts if using canned. Cut them in half or quarters if they are large.

Step 3

In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the shrimp in a single layer and cook for 1-2 minutes on each side or until pink and opaque. Remove the shrimp from the skillet and set aside.

In the same skillet, add the remaining 1 tablespoon of olive oil. Add the minced garlic and cook for 30 seconds or until fragrant, taking care not to burn the garlic.
