Ingredients

  • 1 whole French baguette
  • 4 tablespoons Extra virgin olive oil
  • 2 cloves Garlic cloves
  • 1 pound Shrimp (peeled and deveined)
  • 15 ounces Canned white beans (drained and rinsed)
  • 1 cup Cherry tomatoes (halved)
  • 2 tablespoons Fresh parsley (chopped)
  • 2 tablespoons Fresh basil (chopped)
  • 2 tablespoons Lemon juice
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Slice the baguette into 1/2-inch thick rounds (about 12-14 slices). Brush both sides of each slice with 2 tablespoons of olive oil.

Step 3

Place the baguette slices on a baking sheet and bake for 7-8 minutes, flipping halfway through, until golden and crisp. Remove and set aside.

Step 4

Mince the garlic cloves and set aside half of it for later use.

Step 5

In a medium skillet, heat 2 tablespoons of olive oil over medium heat. Add half of the minced garlic and sauté for 30 seconds until fragrant.
