Ingredients

  • 12 oz cheese tortellini
  • 1 lb shrimp, peeled and deveined

  • 0.5 tsp black pepper
  • 0.25 tsp red pepper flakes (optional)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the cheese tortellini according to package instructions. Drain and set aside, reserving 1/2 cup of the pasta cooking water.

Step 2

While the tortellini cooks, heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the green beans and red bell pepper slices. Sauté for 5-7 minutes, stirring occasionally, until the vegetables are tender-crisp. Transfer to a plate and set aside.

Step 3

In the same skillet, heat the remaining 1 tablespoon of olive oil and 2 tablespoons of butter over medium heat. Add the minced garlic and cook for 1 minute, until fragrant.
