Ingredients

  • 12 ounces cheese tortellini
  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 2 cups baby spinach
  • 0.5 cup grated Parmesan cheese
  • 2 tablespoons lemon juice
  • 0.5 teaspoon red pepper flakes (optional)

  • 0 to taste black pepper
  • 2 tablespoons fresh parsley, chopped (for garnish)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the cheese tortellini according to package instructions. Reserve 1/2 cup of pasta water, then drain the tortellini and set aside.

Step 2

While the tortellini cooks, heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the shrimp, season with salt and black pepper, and cook for 2-3 minutes per side until they turn pink and opaque. Remove the shrimp from the skillet and set aside.

Step 3

In the same skillet, add the remaining 1 tablespoon of olive oil and 2 tablespoons of butter. Stir in the minced garlic and cook for 1 minute until fragrant.

Add the halved cherry tomatoes to the skillet and cook for 3-4 minutes, stirring occasionally, until they begin to soften.

Remove from heat and garnish with chopped fresh parsley.
