  • 12 leaves Fresh mint leaves
  • 12 sprigs Fresh cilantro leaves
  • 3 tablespoons Hoisin sauce
  • 4 tablespoons Peanut butter, creamy
  • 2 tablespoons Soy sauce
  • 1 tablespoon Rice vinegar
  • 1 teaspoon Sesame oil
  • 2 tablespoons Warm water
  • 2 tablespoons Crushed peanuts (optional, for garnish)

Directions

Step 1

Cook the rice noodles according to the package instructions. Drain, rinse with cool water, and set aside.

Step 2

Prepare the peanut dipping sauce: In a small bowl, whisk together hoisin sauce, peanut butter, soy sauce, rice vinegar, sesame oil, and warm water until smooth. Adjust the consistency with more water if necessary. Set aside.

Step 3

Prepare the vegetables: Julienne the carrot, cucumber, and red bell pepper. Wash and dry the lettuce leaves. Trim them to fit the rolls if needed.
