Ingredients

  • 4 large caps Portabella mushrooms
  • 1 cup Shrimp (peeled, deveined, and diced)
  • 4 oz Cream cheese (softened)
  • 1 cup Mozzarella cheese (shredded)
  • 0.25 cup Parmesan cheese (grated)
  • 0.33 cup Panko bread crumbs
  • 2 cloves Garlic (minced)
  • 2 tbsp Fresh parsley (chopped)
  • 2 tbsp Butter
  • 2 tbsp Olive oil
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 0.25 tsp Paprika
  • 1 tsp Lemon juice

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Clean the portabella mushroom caps by gently wiping them with a damp paper towel. Remove the stems and scrape out the gills using a spoon to create space for the stuffing.

Step 3

Brush both sides of the mushroom caps lightly with olive oil and place them on a baking sheet, gill side up. Set aside.

Step 4

In a skillet over medium heat, melt 1 tablespoon of butter. Add the minced garlic and cook for 30 seconds until fragrant.

Add the diced shrimp to the skillet and sauté for 2 minutes or until they just turn pink. Remove from heat and let cool slightly.
