Ingredients

  • 16 pieces Jumbo pasta shells
  • 1 pound Shrimp (peeled, deveined, and chopped)
  • 1 cup Ricotta cheese
  • 1.5 cups Mozzarella cheese (shredded)
  • 0.5 cup Parmesan cheese (grated)
  • 1 Egg
  • 2 cloves Garlic (minced)
  • 1 cup Spinach (fresh, chopped)
  • 2 tablespoons Olive oil
  • 1.5 teaspoons Salt
  • 1 teaspoon Black pepper
  • 1 teaspoon Italian seasoning
  • 2 cups Marinara sauce
  • 2 tablespoons Fresh parsley (chopped)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Bring a large pot of salted water to a boil. Cook the jumbo pasta shells according to package instructions until al dente. Drain and set aside to cool slightly.

Step 3

In a large skillet, heat olive oil over medium heat. Add minced garlic and chopped shrimp. Cook for 2-3 minutes until the shrimp turn pink and are fully cooked. Remove from heat and let cool.

Step 4

In a large bowl, combine ricotta cheese, 1 cup of mozzarella cheese, Parmesan cheese, egg, cooked shrimp, chopped spinach, 1 teaspoon of salt, 1/2 teaspoon of black pepper, and Italian seasoning. Mix well until fully incorporated.

Spread 1 cup of marinara sauce evenly on the bottom of a 9x13-inch baking dish.

Pour the remaining 1 cup of marinara sauce evenly over the stuffed shells.

Sprinkle the remaining 1/2 cup of mozzarella cheese over the top.

Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.

Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.

Remove from the oven and let cool for 5 minutes before serving. Garnish with freshly chopped parsley.
