Ingredients

  • 450 grams Shrimp (peeled and deveined)
  • 150 grams Baby spinach
  • 200 grams Grape tomatoes (halved)
  • 1 piece Avocado (sliced)
  • 0.5 piece Red onion (thinly sliced)
  • 3 tablespoons Extra virgin olive oil
  • 2 tablespoons Fresh lemon juice
  • 1 teaspoon Honey
  • 1 teaspoon Dijon mustard
  • 1 clove Garlic (minced)
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 tablespoon Olive oil (for cooking shrimp)

Directions

Step 1

Rinse and pat dry the shrimp. Season lightly with a pinch of salt and black pepper.

Step 2

Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Cook the shrimp for 2-3 minutes on each side until pink and opaque. Remove from heat and set aside.
