Ingredients

  • 250 grams Soba noodles
  • 400 grams Shrimp, peeled and deveined
  • 3 tablespoons Soy sauce
  • 2 tablespoons Sesame oil
  • 3 cloves Garlic, minced
  • 1 teaspoon Ginger, grated
  • 1 tablespoon Honey
  • 1 tablespoon Rice vinegar
  • 2 stalks Green onions, thinly sliced
  • 1 tablespoon Sesame seeds
  • 1 medium Carrot, julienned
  • 1 medium Red bell pepper, thinly sliced
  • 2 cups Spinach, fresh
  • 1 tablespoon Cooking oil (vegetable or canola)

Directions

Step 1

Bring a large pot of water to a boil and cook soba noodles according to package instructions (typically 5-7 minutes). Drain, rinse with cold water to stop cooking, and set aside.

Step 2

In a small bowl, whisk together soy sauce, sesame oil, garlic, ginger, honey, and rice vinegar to make the sauce. Set aside.

Step 3

Heat 1 tablespoon of cooking oil in a large skillet or wok over medium-high heat. Add the shrimp and cook for 2-3 minutes per side, until pink and fully cooked. Remove from skillet and set aside.

Step 4

In the same skillet, add carrots and red bell pepper. Stir-fry for 3-4 minutes, or until slightly softened.

Step 5

Add the spinach to the skillet and cook for 1-2 minutes, stirring frequently, until wilted.
