Ingredients

  • 12 oz Linguine or spaghetti
  • 1 lb Shrimp (peeled and deveined, tails on or off)
  • 2 tbsp Olive oil
  • 4 tbsp Unsalted butter
  • 5 cloves Garlic (minced)
  • 1 cup Dry white wine (such as Sauvignon Blanc)
  • 3 tbsp Fresh lemon juice
  • 0.25 tsp Red pepper flakes
  • 1 tsp Salt
  • 0.5 tsp Freshly ground black pepper
  • 0.25 cup Fresh parsley (chopped)
  • 0.25 cup Parmesan cheese (grated, optional)

Directions

Step 1

Bring a large pot of salted water to a boil. Add the pasta and cook until al dente according to package instructions. Reserve 1/2 cup of pasta water, then drain and set the pasta aside.

Step 2

Meanwhile, heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the shrimp in a single layer and cook for 1-2 minutes per side, until pink and opaque. Remove the shrimp from the skillet and set aside.

Step 3

In the same skillet, melt 4 tablespoons of butter over medium heat. Add the minced garlic and cook for 1 minute, stirring frequently, until fragrant.

Pour in the white wine and bring to a simmer. Cook for 2-3 minutes to reduce the wine slightly.

Stir in the fresh lemon juice, red pepper flakes, salt, and black pepper. If the sauce seems too thick, add a splash of the reserved pasta water to loosen it.

Return the shrimp to the skillet and toss to coat in the sauce. Simmer for 1-2 minutes to reheat the shrimp.

Add the cooked pasta to the skillet and toss gently to combine everything. Taste and adjust seasoning as needed.
