Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 4 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 half cup dry white wine or chicken broth
  • 2 tablespoons fresh lemon juice
  • 0.25 teaspoons red pepper flakes
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper
  • 2 tablespoons fresh parsley, chopped
  • 8 ounces spaghetti or linguine
  • 0.25 cup Parmesan cheese, grated (optional)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the spaghetti or linguine according to package instructions until al dente. Drain and set aside.

Step 2

While the pasta cooks, heat 2 tablespoons of butter and 2 tablespoons of olive oil in a large skillet over medium heat.

Step 3

Add the minced garlic to the skillet and sauté for 1-2 minutes until fragrant, being careful not to let it burn.

Step 4

Add the shrimp to the skillet in a single layer. Cook for 2-3 minutes on one side until pink and opaque, then flip the shrimp and cook for another 2 minutes. Remove the shrimp from the skillet and set aside.

Step 5

Deglaze the skillet with the white wine (or chicken broth), scraping up any browned bits from the bottom. Allow the liquid to simmer for 2-3 minutes to reduce slightly.

Step 6

Stir in the remaining 2 tablespoons of butter, lemon juice, red pepper flakes, salt, and black pepper. Cook for an additional 1-2 minutes.

Step 7

Return the shrimp to the skillet, tossing them to coat in the sauce. Remove the skillet from heat and stir in the chopped parsley.

Step 8

Toss the cooked pasta with the shrimp and sauce in the skillet until well combined.

Step 9

Serve the shrimp scampi immediately, garnished with additional parsley and grated Parmesan cheese, if desired.
