Ingredients

  • 1 pound Large shrimp (peeled and deveined)
  • 4 tablespoons Unsalted butter
  • 2 tablespoons Olive oil
  • 3 cloves Garlic cloves (minced)
  • 2 tablespoons Lemon juice (freshly squeezed)
  • 2 tablespoons Dry white wine or chicken broth
  • 2 tablespoons Fresh parsley (chopped)
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 0.25 teaspoons Red pepper flakes (optional)
  • 2 tablespoons Parmesan cheese (for garnish, optional)
  • 1 teaspoon Lemon zest (optional)

Directions

Step 1

Preheat your oven's broiler to high and position the rack about 6 inches from the heat source.

Step 2

Rinse the shrimp under cold water, pat them dry with paper towels, and set them aside.

Step 3

In a small saucepan, melt the butter with the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to let the garlic burn.

Step 4

Stir in the lemon juice, white wine or chicken broth, salt, black pepper, and red pepper flakes (if using). Let the mixture simmer for 2 minutes, then remove it from the heat.

Step 5

Arrange the shrimp in a single layer in a broiler-safe dish. Pour the butter and garlic mixture evenly over the shrimp, ensuring they are fully coated.

Step 6

Place the dish under the broiler and cook for 5-6 minutes or until the shrimp are pink, opaque, and cooked through. Be careful not to overcook the shrimp.

Step 7

Remove the dish from the oven and sprinkle the chopped parsley on top. Add lemon zest and a sprinkle of Parmesan cheese if desired.

Step 8

Serve the shrimp scampi immediately with crusty bread, pasta, or rice to soak up the delicious sauce, and enjoy!
