  • 3 green onions
  • 2 tablespoons parsley (fresh)
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Heat the olive oil in a large, heavy-bottomed pot or Dutch oven over medium heat.

Slice the andouille sausage into thin rounds and add to the pot. Cook for 4-5 minutes, stirring occasionally, until browned, then remove and set aside.
