Ingredients

  • 500 grams large shrimp, peeled and deveined
  • 1 cup fresh or frozen peas
  • 2 stalks celery, diced
  • 1 medium red bell pepper, diced
  • 0.5 medium red onion, finely chopped
  • 2 tablespoons fresh parsley, chopped
  • 3 tablespoons mayonnaise
  • 2 tablespoons Greek yogurt
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Bring a medium pot of water to a boil. Add the shrimp and cook for 2-3 minutes, or until they turn pink and are cooked through. Drain and transfer the shrimp to a bowl of ice water to stop the cooking process. Once cooled, pat dry and chop into bite-sized pieces if desired.
