  • 1 lb Raw shrimp, peeled and deveined
  • 2 cups Coconut milk
  • 1 medium Bell pepper, diced
  • 1 medium Yellow onion, diced
  • 2 stalks Scallions, chopped
  • 1 Scotch bonnet pepper, finely chopped (optional)
  • 3 Garlic cloves, minced
  • 4 sprigs Fresh thyme
  • 2 medium Tomatoes, diced
  • 1 tbsp Lime juice
  • 1 tbsp Vegetable oil
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 0.25 tsp Ground allspice

Directions

Step 1

Rinse the shrimp under cold water and pat dry with a paper towel. Set aside.

Step 2

Heat the vegetable oil in a large skillet or saucepan over medium heat.

Step 3

Add the diced onion, bell pepper, scallions, and garlic to the pan. Sauté for 3-4 minutes until softened and fragrant.

Step 4

Add the diced tomatoes, thyme, and Scotch bonnet pepper (if using), and cook for an additional 2-3 minutes, stirring frequently.

Step 5

Pour in the coconut milk and stir well. Season with salt, black pepper, and ground allspice. Bring the mixture to a gentle simmer.

Step 6

Add the shrimp to the pan and cook for 5-7 minutes, stirring occasionally, until the shrimp are pink and fully cooked. Do not overcook the shrimp, as they can become rubbery.
